2. Add the oil to a large pan over medium-high heat and allow to come to temperature. Add the onions and sauté for about 5 minutes, until softened and translucent. Add the ground beef and the taco seasoning. Break the beef apart with a wooden spoon, and cook for an additional 5 minutes, or until the beef is completely cooked through.
3. Add the beef broth, canned tomatoes, salt, and pepper to the beef, stir to combine, and allow the mixture to come to a simmer.
4. Once the mixture has reached a simmer make the cornstarch slurry. Add the cornstarch to a small bowl along with 2 tablespoons of water and mix with a fork to combine. Add the mixture to the beef, stir, and allow to simmer 3-4 minutes more. Stir in 1 cup of the cheese and set the mixture aside.
