Calories: 33 per servingTotal Time: 35 mins1. Wash the green tomatoes thoroughly. Then cut them to roughly the same size, but small enough they will fit inside the canning jars. Use a variety of pint size to quart sized jars for this recipe.
2. The prepare the pickling liquid combine the vinegar, water, salt and sweetener together in a medium saucepan. Bring the mixture to a boil.
3. In the meantime, pack the jars as tightly as possible with the cut green tomatoes. Be sure to add some chilies and garlic cloves in between the layers of tomato. Feel free to add other herbs and spices to the jars if you would like to.
4. Once the pickling liquid is at a boil, pour the hot liquid into a glass measuring cup. Then use the measuring cup to pour the hot liquid into the jars. Fill the jars to the very top making sure to cover the tomatoes completely. Place the lids on the jars and allow the jars to cool at room temperature for an hour. This will help to cook the tomatoes slightly so they are not raw. Place them directly into the refrigerator after an hour. Keep jars stored in the refrigerator until they are ready to serve.

Total Time: 20 minsCategory: EssentialsCalories: 19 per serving1. Wash a wide-mouth 1-quart mason jar and and its lid in hot soapy water, then rinse and let air dry.
2. Slice the tomatoes into wedges and pack them tightly into the jar. (If you have very large tomatoes, you may want to slice them into smaller wedges.)
3. Peel the garlic. In a small saucepan, combine the garlic, vinegar, water, dill, peppercorns, turmeric, sugar, and kosher salt. Bring to a low boil, stirring occasionally to dissolve the sugar and salt.
4. Once dissolved, pour the brine mixture into the jar, allowing the garlic to settle on top of the vegetables. Tap the jar on the counter to release any air bubbles. Discard any remaining brine, or top off the jar with extra water if any tomatoes are exposed at the top. Screw on the lid tightly and allow to cool to room temperature, then store in the refrigerator for at least 24 hours before eating. If desired, discard the garlic after 24 hours. Keeps up to 1 month refrigerated.

Frequently Asked Questions

How do you pickle green tomatoes?

In a large pot on the stove, combine the vinegar, water and salt. Heat while stirring until everything is combined. Then pour the hot pickling liquid over top of your green tomatoes and add the garlic and fresh dill (or dill seeds) to each jar. Affix your lids and rings.

How do you cook tomatoes and dill together?

Pack tomatoes into hot jars, leaving 1/4-inch headspace. Add 1 garlic clove, 1 head of dill (or 2 tsp. dill seeds) and 1 bay leaf to each jar. Ladle hot liquid over tomatoes, leaving 1/4-inch headspace.

How do you make low carb fried green tomatoes?

To make low carb fried green tomatoes, first slice your green tomatoes into half-inch thick rounds. Next, follow a standard breading procedure: Dredge the slices in the protein powder/oat fiber combination. Remove excess. Dip each round into the egg mixture to coat, then into the keto breadcrumb mixture.

Are pickled green tomatoes kosher?

Home-canned, mildly-tart pickled green tomatoes are a real delicacy and very hard to come by, unless you make them or live near a good deli. The recipe says these are “kosher-style”, but doesn’t say what it is that makes them kosher style. Perhaps it is the weaker pickling liquid. This recipe comes from So Easy to Preserve.
