1. In a medium saucepan, combine vinegar, water and pickling salt. Mix to melt salt, and once it reaches a boil, remove it from the burner and let cool.
2. Meanwhile, slice your cucumbers how you’d like them pickled. You can do them tall and long, or I prefer them as ½” nuggets.
3. Add your garlic cloves, dill, peppercorns and mustard seed to your jars or instant pickler, then add sliced cucumbers on top until about ¾ full.
4. Add cooled brine over the pickles, making sure that the tops of all the cucumbers are completely covered, but leaving a little room at the top.

1. Wash all of the vegetables and most importantly cucumbers. Spread them on a kitchen cloth to fully dry.
2. Boil the water, into which you add salt. I normally use a ratio of 2l water - 2 Tablespoons of salt. Once you boil the water and mix the salt in, make sure the salt dissolves. Switch the water off and let it cool fully.
3. Into the cooled water add colourful Peppercorn, mustard seeds and then cloves. Mix it fully and set aside. In the meantime the water will get lovely flavours from the spices.
4. Prepare your Mason Jars or any other jars you are going to use. They need to be fully washed and dry.

1. Stir the vinegar, hot water, and salt together until the salt has completely dissolved. Set this brine aside.
2. Layer all of the other ingredients in a wide-mouth quart jar as follows: spices and herbs, garlic, jalapeno, onions, and cucumbers.
3. Pour the brine over the top, filling the jar to the bottom of its neck and completely covering the cucumbers. You will not use all of the brine. (Watch the video below if you need a visual!)
4. Put the lid on the jar, give it a gentle shake, and refrigerate. These pickles are best after sitting in the fridge for around a week, but you can start enjoying them in 3-5 days if you're feeling impatient. :)
