These low carb kolacky are my version of the traditional Christmas cookie from Poland! They're made from sweetened fathead dough, and are sugar free and keto friendly! Preheat the oven to 350F. Make the dough by melting shredded mozzarella and cream cheese together in the microwave. Stir in some fine almond flour and sweetener.
Kolache (koláče) is a sweet Czech pastry made of yeast dough. It has a round shape about 3-4 inches (8 cm) in diameter. The kolache is flat, generously filled in the middle with fruit, poppy seed, or cottage cheese filling. Before baking, the sides of the pastry are brushed with beaten egg and the surface is sprinkled with streusel topping.
Using your fingers, press a deep indentation in the center of each ball (too shallow, and the fillings will tumble out as the kolaches rise in the oven). Add a mounded tablespoon of Apple Filling, or 2 teaspoons of Cheese Filling, and crumble a teaspoon of the topping mixture over each. Bake the kolaches for 20 to 25 minutes, or until golden brown.
Place the pieces of dough on a parchment-lined baking sheet, and let rise until puffy, about 30 to 45 minutes. Using your fingers, press a deep indentation in the center of each ball (too shallow, and the fillings will tumble out as the kolaches rise in the oven).
