Roasting garbanzo beans is quick and easy. All you need is canned beans (or cooked dried beans), olive oil and your choice of spices. Pop them in the oven and in no time you have a great garnish, snack or side dish. Empty cans of garbanzo beans into colander, rinse well with cold water and allow to drain.
Fold a large dish towel or flour sack in half, placing the chickpeas between (pictured above left). With your hands laid flat, roll the chickpeas using the palm of your hand and extended fingers to move the garbanzo beans around. Remove loose skins.
Next arrange them on top of the paper towels, laying more paper towels on top. Roll with your hands and rub the garbanzos until they are very dry. If you do not dry them well, they tend to burn in the cooking process. The skins will come off, but don’t worry if they don’t all come off.
