    1. Preheat an oven to 350 degrees F (175 degrees C). Lightly grease two baking sheets. Combine flour and baking soda in a bowl.
    2. Beat the butter, white sugar, brown sugar, and instant pudding with an electric mixer in a large bowl until smooth. Beat the first egg into the butter until completely blended, then beat in the vanilla with the last egg. Mix in the flour mixture until just incorporated. Fold in the white chocolate chips and cranberries; mixing just enough to evenly combine. Drop spoonfuls of the dough 2 inches apart onto prepared baking sheets.
    3. Bake in the preheated oven until edges of the cookies become golden brown, 9 to 12 minutes. Cool in the baking sheet for 10 minutes before removing to cool completely on a wire rack.

    1. Preheat oven to 350. Line a baking sheet with parchment paper.
    2. Add the butter, flours, sweetener, gelatin, vanilla, and 2 tablespoons of the dried cranberries to the food processor. Pulse until the cranberries are chopped and the dough comes together in a ball. Add the remaining cranberries. Pulse just until they are mixed in.
    3. Divide the dough into 2 balls. Press into 2 circles on the parchment lined baking sheet. Cut each into 8 wedges. A pizza slicer works well for this.
    4. Bake for 15 minutes. Cool for 10 minutes. Separate so there is an inch or so between each wedge. Bake an additional 10 minutes until golden. Cool completely.
