1. In a medium saucepan, combine the cranberries, raisins, white sugar, brown sugar, cinnamon, ginger, cloves and water. Bring to a boil over medium-high heat, then reduce the heat and simmer over low heat until the berries start to pop, about 5-7 minutes.
2. Add the onion, apple, and celery; continue to cook, stirring occasionally until the mixture begins to thicken, 5-10 more minutes. Transfer to a container and cool slightly. Refrigerate overnight to allow flavors to meld.

1. In a large stainless steel saucepan combine cranberries, onions, pineapple, garlic, gingerroot, orange zest, and juice and vinegar. Bring to boil over medium heat stirring occasionally.
2. Reduce heat, cover and boil gently until cranberries soften and burst, about 15 minutes.
3. Add sugar, raisins, water, mustard, cinnamon, cloves, and cayenne. Boil gently, stirring frequently for about 15 minutes. (Mixture will be slightly runny and will thicken upon cooling)
4. Ladle hot chutney into hot jars, leaving ½ inch headspace. Remove air bubbles, and adjust headspace by adding additional chutney.

4. Make sure your rack is on the bottom of the canner and place the jars in the water bath making sure that the water covers each of the jars by 1 to 2 inches. Add hot water to the canner if it doesn't measure up.
