1. Butter the pudding basin and put 3 tbsp of the golden syrup (or maple syrup/honey) in the bottom of the bowl.
2. Put the rest of the syrup, treacle, butter, sugar, eggs, flour and baking powder into a large mixing bowl and beat slowly, then increase the speed and beat for 2 minutes, scraping the sides of the bowl with a spatula at least once. Pour the batter into the pudding basin, on top of the syrup.
3. Tear a piece of parchment paper and aluminum foil, large enough to cover the top of the bowl, and go halfway down the sides, and place the foil on top of the parchment. Create a pleat down the center, so that the sponge will have space to expand when cooking.
4. Place the paper and foil over the pudding basin, then tie some string under the lip of the bowl, leaving extra string to tie over the top to form a handle, tying it on the opposite end. It seems complicated, but really isn't.

1. Generously butter a 1.2-litre pudding basin. Lay out a large sheet of foil and top with a sheet of baking paper. Butter the paper, then fold both layers to make a pleat in the centre. These are the coverings.
2. Mix the lemon juice and 125g golden syrup together and spoon into the basin.
3. Cream 150g butter and the sugar together in a mixing bowl until light and fluffy. Beat in the eggs, then sift in the flour and salt and mix again. Add enough milk to give a soft dropping consistency, then scrape the sponge mix on top of the syrup – there needs to be room for the pudding to rise.
4. Cover with the baking paper and foil, buttered paper-side down. Tie securely with string, making a handle to easily lift the basin. Trim the excess paper and foil to prevent water getting into the pudding as it steams
