1. Add all the sauce ingredients to a medium bowl and whisk to combine. Set aside.
2. If you have time to marinate the beef for a few hours, whisk all the sauce ingredients except the cornstarch. Add the beef strips to a freezer bag and pour the marinade over it. Refrigerate for up to 24 hours. When ready to cook, remove beef from marinade, add liquid to a bowl and whisk in cornstarch.
3. Heat a cast iron skillet or wok over high heat and add 2 tablespoons of oil.
4. Once the oil is hot, add the sliced onion and peppers and stir-fry for about 5 minutes, or until tender. Transfer to a plate when finished.
