1. Heat a large frying pan and fry the chorizo until the oils start releasing and the meat brows. Remove the sausage and set aside.
2. Add the olive oil to the pan of orange oil and gently fry the onion for about 3 minutes until softened. add the red pepper and continue to fry for a further 2 or so minutes until they too are softened. Return the chorizo to the pan with the garlic and briefly fry.
3. Add the Monis Medium Cream and allow the liquid to (mostly) cook off.
4. Add the tomatoes, sugar, chickpeas, smoked paprika and cumin, and adjust the seasoning with salt and pepper. Allow this to bubble on a gentle heat for about 20 minutes.

1. Warm the olive oil in a large saucepan over a low heat. Once the oil is warm add the onion and garlic and sauté for 3-5 minutes until starting to soften. Stir frequently to keep the garlic from burning. Add the diced chorizo, peppers, and bay leaves and cook for another 5 minutes.
2. Add the red wine, paprika, and chopped tomatoes. Give it all a stir to micx together and increase the heat to medium. Cover and let that gently stew for about 5-7 minutes. Remove the lid and let cook uncovered for 1-2 minutes to let the sauce reduce slightly.
3. Add the drained chickpeas, cover the pan once more and cook for another 3-4 minutes on a low heat to warm the chickpeas through. Season with salt & pepper, and taste.
4. Sprinkle over the fresh parsley and serve.
