Whisk broth and sour cream in a small bowl; add to the pan. Bring to a simmer and cook, stirring, until the flavors have melded and the sauce has thickened, 2 to 3 minutes more. Add the chicken and cook until heated through, 1 to 2 minutes more. Garnish with parsley, if desired.

Turn heat to medium low and stir in sun dried tomatoes, Parmesan, thyme, oregano and sour cream or heavy cream (add sour cream slowly).
4. Bring everything to a simmer for 1-2 minutes, stirring to combine. Return chicken to the skillet and nestle into the sauce.
