Cheesy pierogi casserole is an easy casserole made with ham and cheese sauce with potato-filled dumplings and baked. Boil the pierogi according to package directions. It typically is 8-10 minutes in 2 quarts of boiling water. Once they are cooked, drain in a strainer. In another pot, melt 4 tablespoons of butter.
Simply combine softened cream cheese, sour cream, vegetable broth, and cheddar cheese. Whisk it all together, and add a bit of salt and pepper, to taste. Next, pour the cheesy sauce over the pierogies, and toss until the broccoli and pierogies are well coated in the sauce. Bake the casserole at 425 degrees Fahrenheit for 20 minutes.
Now this low carb pierogi recipe does take a little bit of time, but I promise, it’s worth it. Best to eat them hot and with some deeeelicous sour cream. The first dough I used for this is a variation of ‘fathead dough’. If you haven’t heard of fathead dough, it’s so versatile!
Top with the sour cream, cream and half of the cheese. Mix to combine the creamy mixture well amongst the vegetables. Top with the remaining cheese and place into the oven for 15 to 20 minutes or until golden and cooked to your liking. This low carb vegetable casserole really is one of my favourite keto dinners.
