In a separate bowl, whisk together the coconut oil, egg, and vanilla. Stir in the maple syrup until thoroughly incorporated. Add in the flour mixture, stirring just until incorporated.
They turned out great on the first try and they are now Low Carb, Sugar Free, Carrot Cake Cookies! I wrote up this post and tried making them one more time (my blogger’s version of pinching myself to make sure I’m not dreaming) and once again I got perfection!
While there are no actual oats in the cookies, the sliced or flaked almonds do a nice job of mimicking the look and texture of the real thing. The texture is crunchy and tender with a little “chew”, which is lacking in most low carb cookies. This isn’t the first time I’ve used sliced or flaked almonds as an oat substitute.
