First, set a large dutch oven over medium heat on the stovetop. Add the oil, and once hot, add in the goat meat, curry powder, coriander, and paprika. Stir to thoroughly coat the meat in the spices and brown on all sides.
Add the ginger and garlic, mix well and sauté for another 1-2 minutes. Put the meat (and bones, if using) back into the pot, along with any juices left in the bowl. Mix well. Pour in the coconut milk and tomatoes and 4-5 tablespoons of the curry powder. Add 4 cups of water. Stir to combine. Add the thyme.
In his recipe, Levi Roots suggests adding a few slices of Scotch bonnet. But, if you like your goat curry extra spicy, you could add a whole Scotch bonnet while marinading and cooking and then remove before serving.
