DirectionsStep1Make the low calorie pie crust. Set aside to cool while you make the sauce and filling.Step2Make the caramel sauce by combing the milk and sugar in a small saucepan and bringing to a medium heat. Whisk the sugar in until it's combined then bring to a simmer. Simmer on medium heat 5 minutes. Then r…Step3Preheat oven to 375 F and prepare a 9-inch pie dish by lightly greasing with coconut oil.Step4In a mixing bowl, whisk the egg, egg whites and real maple syrup (not fake) together until frothy 2-3 minutes. Add the vanilla extract and coconut oil then pour into the prepared pie crust.Step5Top the mixture with the pecans then sprinkle with salt.Step6Bake 45-50 minutes at 375 F until the crust is brown and the center of the pie is firm. It will raise slightly during baking then deflate a bit after cooling.Step7Cool at room temperature a minimum of 1 hour before slicing. I like to nudge the crust loose with a wood spatula before slicing to prevent it from cracking off.Step8Serve with 1-2 teaspoons of caramel sauce on top. If your caramel sauce is runny, you can mix in a 1/4 or 1/2 teaspoon of corn starch, arrowroot power or tapioca to thicken itIngredientsIngredients1 Low Calorie Pie Crust1 Egg (room temperature)2 Egg Whites (room temperature)¾ cupMaple Syrup1 ½ teaspoonsVanilla Extract2 tablespoonsCoconut Oil (melted)1 teaspoonSea Salt½ cupRaw Pecans¼ cupUnsweetened Cocconut Milk (or milk of choice, a higher fat milk works best)1 tablespoonCoconut SugarSee moreNutritionalNutritional183 Calories9 gTotal Fat20 mgCholesterol23 gCarbohydrate332 mgSodium2 gProteinFrom skinnyfitalicious.comRecipeDirectionsIngredientsNutritionalExplore furtherLow Carb Pecan Pie (Sugar Free) - Diabetes Strongdiabetesstrong.comThe BEST Keto Sugar-Free Pecan Pie - Wholesome Yumwholesomeyum.comCaramel Pecan Pie - THIS IS NOT DIET FOODthisisnotdietfood.comSalted Caramel Pecan Pie (Gluten Free) - Rebel Recipesrebelrecipes.comHealthy Pecan Pie Bars (Gluten Free, Paleo, Dairy Free)thecleaneatingcouple.comRecommended to you based on what's popular • Feedback

    1. Note: Toasting the pecans, cooking the caramel and preparing the crust can all be done simultaneously. This dessert can be prepared in 30 minutes.
    2. Preheat oven to 350 and toast the pecans for 8-12 minutes until they are lightly browned. Let cool completely. Chop and place into a medium bowl.
    3. Spray a 9x9 inch square pan with baking spray and cut a piece of parchment long enough to fit the bottom exactly but hang over two opposite sides.
    4. Prepare the Caramel: Measure the first 4 ingredients together in a small pot or saucepan and whisk over medium heat until combined. Bring it to a boil. Watch the heat carefully and turn it down just as the caramel mixture begins to crawl up the sides of the pot. You want the mixture boiling enough that it will get thick, but not so much that it will boil over and make a mess of the stove. Just watch it for a minute and adjust the heat up and down until you find the sweet spot. Remember, it needs to be simmering pretty quickly, but not moving up the sides of the pot. Let the mixture cook for 20 minutes. Take the low carb caramel off of the heat and whisk in the 2 ounces of salted butter, sifted powdered sweetener, stevia glycerite, Brandy and vanilla until incorporated.
