My Salted Caramel Popcorn is a delight. It only takes 5 ingredients and 15 minutes to whip up a batch of this sugar-free Trim Healthy Mama friendly treat. This is a Trim Healthy Mama Energizing or E recipe.
(My top tip: I like to use salted butter for a salted caramel version!) Add in the sweetener, heavy cream and salt (leave out if using salted butter), stirring until fully combined. Add in the molasses (optional), and stir briefly until just combined. Simmer over very low heat for 15 minutes (don't stir at all!), taste for seasoning.
Melt the butter in a small pan and let it cook until golden brown. This will give the caramel deeper flavor. Pour in heavy cream and stir until combined. Lower the heat and simmer for a minute. Add in sweetener of choice, we used erythritol. Let that dissolve for a minute. Add a pinch of salt as well.
