2. In a medium-size saucepan over medium heat add 3 tablespoons of butter. When the butter has melted add the flour. Whisk together the butter and flour and continue to cook for about 1 minute. The butter and flour mixture will become fragrant like pie dough. Slowly add in the milk and continue to whisk. The sauce will thicken. When all of the milk has been incorporated into the sauce continue to stir and cook until the sauce thickens. Season with salt and pepper. Slowly add in the cheese and stir to incorporate the cheese into the sauce. Cook until the cheese has fully melted.
3. Pour cheese sauce over the Brussels sprouts, and then top with the crispy cooked bacon. Bake in the oven for about 45 minutes.

Cook over medium-low heat for about 4 minutes, stirring, until the sauce thickens. Add fresh thyme, parmesan and half of the grated Gruyere cheese into the white sauce and stir until the cheese is melted and incorporated into the sauce.
3. Pour over the brussels sprouts, and top with the remaining cheese. Bake for 15 minutes until top is lightly browned and bubbly.
