Preheat the oven to 325 F. Line a roasting pan with foil and place a rack in the pan. Place the pork roast on the rack and roast for 25 to 30 minutes per pound (2 hours to 2 1/2 hours for a 5-pound roast). The roast should register at least 145 F on a food thermometer, the minimum safe temperature for pork.
Add pork to pan; cook 15 minutes, turning to brown on all sides. Place browned pork in a 5- to 6-quart electric slow cooker. Add onion and garlic to Dutch oven; sauté 3 minutes. Add stock to pan, stirring bottom to scrape up browned bits. Remove pan from heat; stir in reserved 2 tablespoons spice mixture, ketchup, and vinegar.
Drizzle the roast with olive oil and season with chicken seasoning. Grill the pork loin. Place the seasoned pork loin directly on the grill grates over indirect heat. Cook the roast for 1 hour to 1 hour 30 minutes or until the pork reaches an internal temperature of 145 degrees F. Rest, slice, and serve.
We don’t want to overcook a boneless pork loin roast. Because it’s so lean, it can dry out quickly. In fact, I generally recommend removing the roast from the oven when the internal temp is about 140°-143° (F). It will continue cooking after we remove it from the oven and the carryover cooking will bring it to the ideal temperature.
