3. Pour in the boiling water and stir energetically with a fork. Cover the bowl with a tea towel and let the dough rest for 5 minutes.
4. Pour in the cold water and stir. The dough should still look pretty crumbly. Cover again and let the dough rest for 15 minutes.

1. Sift flour into a large bowl or board I prefer to work on my wood board. Add salt and melted and cooled butter. Pour water slowly and knead the dough for a while, preferably by hand. The dough should be soft, plastic and flexible. Wrap a ball of dough in foil and set in the refrigerator for 30 minutes, so the dough will not shrink during rolling.
2. After approximately 30 minutes unroll the dough from foil and divide it into 3-4 parts. Set the other pieces aside. Roll out one piece thinly on the board. Cut circles. Stretch each piece with your hands. Wash the blueberries, let them dry and mix with sugar and vanilla sugar (optional). Place about a tsp of blueberries in the middle and fold the pierogi in half and press the sides firmly together. Place the pierogi side by side on the board. You may freeze the pierogi for later use or cover the pierogi with a slightly damp cloth while waiting to be cooked.
3. Place each series in a pot with salted, boiling water. Take pierogi out 3-4 minutes after they surface to the top. Makes about 50 pierogies. Mix the sour cream with sugar and/or vanilla (optional) or yogurt and place on top of pierogies. Enjoy!
