1. Wash, hull and quarter strawberries. Place in the bottom of an 8" square baking dish.
2. Combine sugar and baking mix in a medium bowl with a fork. Stir in egg and mix...it will be clumpy.
3. I used coconut sugar which looks like brown sugar, but doesn't clump and is low glycemic.
4. Sprinkle the crumb mixture over the strawberries in baking dish. Drizzle butter evenly over the baking mix.
