1. Preheat the oven to 180C/350F. Line a large baking tray with parchment paper.
2. In a large mixing bowl, combine all your ingredients, except for the chocolate chips, and mix until just combined. Using a rubber spatula, fold through the chocolate chips.
3. Using your hands, form 12 balls of dough. Place them on the lined baking tray, 2 inches apart. Gently press down into a slight cookie shape. Top with extra chocolate chips.
4. Bake the cookies for 10-12 minutes, or until just beginning to go golden around the edges. Remove from the oven and let cool on the pan for 10 minutes, before transferring to a wire rack to cool completely.

Stir in 1 cup chocolate chips, reserving the remainder to press into tops of cookie dough before baking
4. Scoop & Bake: Using a cookie / ice cream scoop, scoop out 12 2-tablespoon sized balls of dough. Roll each scoop of dough into a ball between your palms, place on the prepared cookie sheet and press down lightly with the palm of your hand to flatten the dough. Gently press the remaining ¼ cup of chocolate chips evenly into the top of the dough balls. Bake for 11-14 minutes or until the surface of the center of the cookies no longer appears wet. The cookies be very soft and will continue to cook as they sit on the hot cookie sheet after removing from the oven. Let cool completely on the baking sheet
