Instructions Soak the Glutinous Rice (Malagkit) in water for 2 to 3 hrs. Remove the water from the rice by straining, then place it in a pot with the coconut milk and salt. Let it simmer for 20 minutes then turn the heat off. Don’t open the pot, leave it for another 15 to 30 minutes to finish cooking and to cool down.
Grease the inside of the pan with butter to keep the cake from sticking. Or line with banana leaves brushed with butter to add aroma. Bake in a 350 F oven. Transfer the batter to the prepared baking dish and bake in the preheated oven. Insert a toothpick in the center to check for doneness; if it comes out clean the bibingka is cooked.
