Creamy, sticky and chewy. It's like Biko but better. The process for the rice cake is the same as Biko but the toppings are different.
This sweet cake is called Bibingka. In a pot combine glutinous rice and 6 cups of coconut milk and bring to a boil then reduce heat to low. Simmer gently while occasionally mixing to cook them evenly and not burn the bottom, let the mixture thicken until it’s nearly dried out.
Malagkit is Glutinous rice, it is a type of rice grown mainly in Southeast and East Asia, which has opaque grains, very low amylose content, and is especially sticky when cooked.
