1. Place fish fillets in a single layer in a baking dish. Layer over garlic clove slices, followed by red onion slices.
2. Season with salt and pepper and sprinkle the paprika evenly over the top.
3. Pour over half the olive oil and half the white wine.
4. Bake in the oven at 180°C for 10 minutes. Remove and pour over remaining olive oil and wine. Return to the oven and bake another 10 minutes.

5. Slice swede finely with a knife or mandolin. Season steak with salt and pepper. Heat olive oil and butter in a large frying pan and cook steak to your liking. For me this is always very RARE!
6. Meanwhile melt and heat lard or tallow over medium low heat. Fry swede slices in batches and remove to paper towel to drain. Line prosciutto in the centre of a plate. Place your steak on top. Quickly fry your egg, sunny side up unless you prefer a cooked yolk.
7. Top steak with egg and place swede chips in a circle around the steak. Use the runny egg yolk as a dipper for your swede chips.
