1. In a large skillet or pot, warm the olive oil over medium heat. Add the chopped onion, carrots and celery and sauté for 5-6 minutes until softened.

4. Add the lentils and 2 cups of water to the pot and stir well. Bring the mixture to a boil, then lower the heat and simmer for 25-30 minutes. Stir every 5-10 minutes to make sure the lentils don't stick to the bottom and burn. Add another 1/2 cup water or so if needed to thin the sauce if it gets too thick.
