These low carb kolacky are my version of the traditional Christmas cookie from Poland! They're made from sweetened fathead dough, and are sugar free and keto friendly! Preheat the oven to 350F. Make the dough by melting shredded mozzarella and cream cheese together in the microwave. Stir in some fine almond flour and sweetener.
A little lemon extract in the dough of these homemade kolaches adds a bright note of flavor. Use whatever your favorite fruit preserves are, but recipe creator Nan recommends cherry, apricot, or blueberry.
Let’s turn our attention back to the larger, savory kolaches. These combine sausage, eggs, cheese, and hash browns. So, they’re a complete morning meal in a small, on-the-go package. You won’t have to make the dough from scratch, either. Start with refrigerated French bread dough, and you can have these ready in less than an hour.
