1. Preheat a grill to medium-high heat (375 to 450 degrees).
2. While the grill preheats, in a shallow dish mix together 4 cups room temperature water and 3 tablespoons kosher salt. Place the salmon in the water and wait for 15 minutes (this should be about the time it takes to preheat).
3. Pat the salmon dry with a clean towel. Rub it generously with oil and sprinkle it with the kosher salt and seasoning blend (or simply salt and pepper).
4. Grill the salmon over indirect heat skin side down for 5 minutes, until it releases from the grates. Flip and cook another 2 minutes, until the internal temperature is 125 to 130 degrees. Allow to rest for a few minutes, then serve.

1. Pat the salmon dry. In a small bowl, mix the chili powder, cumin, smoked paprika, cayenne, honey granules, a 1/8 teaspoon salt, and 1/8 teaspoon pepper together. Brush each salmon filet with ½ teaspoon olive oil and sprinkle equal amounts of the dry rub on top, patting it onto the salmon so that it adheres.
2. Heat a grill, grill pan or nonstick skillet over medium and spray with cooking spray. Place the salmon in the pan, seasoned side down and cook until browned, about 3 minutes. Flip and cook another 2-5 minutes to desired doneness. Remove from pan and serve.
