2. Take the sole fillets out of the fridge, pat them dry with a paper towel, and set aside on the kitchen counter.

4. Add the dried onion, Parmesan, and spices to the other and whisk until well combined.

3. Melt 2 or 3 more tablespoons of butter, swirl in pan, scraping up bits, add the lemon juice, capers and season with salt and pepper if necessary. Serve over fish. Sprinkle with chopped parsley.
