1. In a small bowl, whisk together almond flour, xanthan gum and salt.
2. Mix in hot water and flavor extract if using. Knead together with hands until combined.
3. Place dough in between two sheets of parchment paper and roll out to an 1/4 inch thick using a rolling pin. Slice dough into small strips. Try to get them as thin as possible, around 1/8 to 1/4 inch thick.
4. Lay strips of dough onto a parchment lined baking tray and stick in the freezer. Once frozen, remove the fries from the tray and store in freezer safe bag in the freezer. Proceed with directions below to cook from frozen.

1. Preheat the oven to 200C/400F. Line a large baking sheet with parchment paper.
2. Slice your rutabagas into thin, 1/8 inch slices. Place them in a mixing bowl. Add your olive oil and mix well. Add the spices and mix until the rutabaga are well coated in it.
3. Transfer the seasoned rutabaga fries to the lined sheet and bake for 15-17 minutes, tossing every 5 minutes.
4. Remove from the oven and enjoy immediately.
