1. Wash the cabbage really well in cold running water, remove and discard any discolored outer leaves. Wash and peel the beets, ginger and garlic. No need to peel the apple.
2. Transfer the shredded cabbage to a large bowl with plenty of space for you to get your hands in and mix it around. Leave your beets and apples to the side for now. Add salt. You’ll want to use a really nice, coarse, unprocessed good quality salt, like this Celtic Sea Salt.
3. Pack the mixture and juice into clean mason jars. Firmly pack down until the liquid comes up. Liquid should lightly cover the mixture. And leave at least 1-2 inches space at the top for expansion.

1. To hard boil & peel eggs: Gently lower the eggs into a pot of cold water. Turn the burner on high and bring to a boil. When the water comes to a boil, turn off the burner, cover the pot and let the eggs sit in the pot for 5-7 minutes.
2. To peel hardboiled eggs: Meanwhile get a large bowl and fill with ice water. When the eggs have sat in the covered pot for 5-7 min. ladle them out into the bowl of ice water. When cool enough to work with, peel the shells off under running cool water (shells come off more easily if you start with older eggs - not really fresh).
3. To pickle: Place peeled hard-boiled eggs in a quart-sized mason jar (or any other heatproof container).
4. Combine remaining ingredients in a saucepan and bring to a boil. Reduce heat and simmer for 3-5 min. Pour warm mix over eggs and cover tightly.

1. Heat oven to 375 degrees F (190 C) and line a baking sheet with parchment paper.
2. Add peeled, cubed beets to a medium mixing bowl along with avocado oil (see notes for oil-free option), salt, and cumin.
3. Roast beets for 35-40 minutes, or until fork tender and slightly golden brown / caramelized, tossing once at the 20-minute mark to ensure even baking. The longer they bake, the more tender and caramelized they become, but be careful not to overcook / burn, or they can become crispy and tough.
4. Once roasted, add back to the mixing bowl from earlier and season with maple syrup, lime zest, and lime juice, and mix. Taste and adjust flavor as needed, adding more lime juice for acidity, lime zest for citrus flavor, cumin for smokiness, salt to taste, or maple syrup for sweetness. Garnish with fresh cilantro, if desired.
