Stir gentle until the sugar is dissolved. Turn stove top heat to high and bring apple juice to a boil, stirring continuously.
Then add the juice, 1/4 cup sugar, and pectin to a large pot. Bring it to a boil, stirring constantly. Add the rest of the sugar and bring back to a boil. Boil for 1 minute while stirring. Spoon off any foam on the top. Ladle the apple mint jelly into your prepared jars. Leave a 1/4 inch head space. Wipe the rims.
This was a very simple apple recipe the produces delicious jelly that can be used on all kinds of things. I like to put it on toast or to add it on top of a cracker with cream cheese, yum. I found this Apple Jelly recipe for water bath canning in my Ball Canning Back to Basics book on page 86.
This apple jelly recipe is thickened using Ball® RealFruit Classic Pectin. You need to cook the jelly to thicken it using Classic Pectin.
