    1. Preheat the oven to Gas Mark 3 / 170oC / 150oC Fan / 325oF
    2. Heat the milk over a medium heat until it is hot but not boiling.
    3. Whisk the eggs, vanilla and sugar in a jug. Once the milk is hot, remove it from the heat and pour a little of it into the eggs, whisking vigorously. Now slowly add the rest of the hot milk to the eggs, making sure that you whisk continuously. By doing this, you are tempering the cold eggs and preventing them from cooking and curdling when you add the hot milk.
    4. Pour the custard mixture into 6 ramekins. Place the ramekins side by side into a deep baking tray. Pour enough warm water into the bottom of the baking tray to come 1/3 of the way up the ramekins.

    1. Preheat your oven to 200℃/395℉ (fan-forced).
    2. In a food processor or blender, mix the eggs, sweetener, yoghurt, vanilla and lemon zest for 30 seconds (until well combined and frothy - like a smoothie). TMX 30sec, speed 4.
    3. Grease the ramekins with a little butter or coconut oil.
    4. Divide the mixture between the four ramekins and place in a water bath. I use a large ovenproof stainless steel fry pan (with a lid), filled to about ¾ of the way up the sides of the ramekins.

    1. Whisk egg, yolks, sugar, cornflour and vanilla extract in a bowl until combined. Bring milk just to the boil in a saucepan over medium heat. Gradually whisk milk into egg mixture until combined. Pour mixture back into saucepan over medium heat. Cook, stirring, for3–5 minutes or until mixture boils and thickens. Transfer to a heatproof bowl. Cover surface with plastic wrap and place in fridge for 1 hour or until custard is cold.
    2. Preheat oven to 200°C. Using an 8 cm round pastry cutter, cut 12 rounds from pastry, and discard trimmed pastry. Roll out each round to a 10 cm disc between two sheets of baking paper. Lightly spray a 12-hole (1/3-cup capacity) muffin tin with oil. Line holes with pastry discs. Spoon custard into pastry shells. Sprinkle with nutmeg. Bake for 20 minutes or until pastry is golden and filling starts to brown. Set aside in tin for 5 minutes before transferring to a wire rack to cool. Serve warm or at room temperature.
