1. Preheat oven to 425°F. Put flour and panko onto two plates and spray a rimmed baking sheet with olive oil.
2. Roll risotto into 1/4 cup-sized balls. Coat with flour, then egg, and roll in panko until completely coated.
3. Transfer arancini to baking sheet and spray with additional olive oil, being sure to coat all sides as best as you can. Bake for 25 minutes, or until golden and heated through.
4. Serve with warm marinara sauce.

Wait a minute or two and see if it holds its shape. If it collapses at bit, use the plain breadcrumbs to thicken the risotto - you may not need any, you might need more or less. Do another test until you are happy with the consistency.
3. Cover risotto and refrigerate for at least 1 hour.
