My family didn't notice that they were not made with rice. Stuffed with cheese a a sliver of basil, the perfect appetizer for your Sunday supper.
Arancini balls or risotto balls (which translates to little oranges) are little balls of risotto that are stuffed with cheese. Most often the cheese is mozzarella. The balls are also usually deep-fried but we want to make them a little easier and slightly healthier so we can feel good about all the cheesy pasta balls that we’re about to consume.
Place the arancini onto the baking tray upright so it stands taller than it is wide. The reason for this is that the arancini will collapse a bit when baking. So by shaping them slightly taller, when they come out of the oven they will be more of a ball shape rather than collapsing into a pattie.
