1. Marinate the beef with all the ingredients in the Marinade, for 15 minutes.
2. Combine all the ingredients in the Sauce, stir and mix well, set aside.
3. Heat up a wok and add 1 tablespoon of oil. When the oil is fully heated, add the beef and do a few quick stirs, until the surface turns opaque and slightly charred. Transfer out and set aside.
4. Clean the wok and add the remaining 1 tablespoon of oil. When the oil is fully heated, add the garlic and stir-fry until aromatic. Add all the peppers and carrots and stir a few times before adding the beef back into the wok. Add the Sauce and stir to combine well. Stir in the scallion and chili oil, dish out and serve immediately with steamed rice.

1. In a liquid measuring cup, add all the ingredients for the stir fry sauce. Slice the scallions and set aside. Allow the ginger, garlic, and Szechuan peppercorns to soak while you slice the beef.
2. Lay the flat iron steak on a cutting board. Cut the beef against the grain into thin slivers. Then toss the beef strips with the corn starch.
3. Set a wok (or XL skillet) over high heat. Add both oils. When the oil starts to smoke, carefully toss in the beef strips and Szechuan chiles. Quickly move them around the wok to stir fry the beef on both sides.
4. Once the beef is mostly cooked (2-4 minutes) stir in the sauce. Allow the sauce to simmer and thicken. Once it reaches your desired consistency, turn off the heat. Serve warm, sprinkled with chopped scallions and sesame seeds.

1. Marinade: Pour marinade ingredients directly into freezer bag and mix well. Add beef and massage in marinade. Marinate at room temperature for 30-60 minutes or refrigerate for 2-8 hours.
2. Sauce: Whisk the sauce ingredients together in a small bowl. You can make at the same time as the marinade, cover and refrigerate OR when ready to cook the beef.
3. Cook: Heat 1-2 tablespoons vegetable oil or peanut oil a large wok or nonstick skillet over HIGH heat until very hot and sizzling. Add half of the beef to the skillet in a single layer and sear 1 minute, flip over and cook 1 more minute (it will cook more in the sauce). Don’t overcook or it won’t be as tender! Transfer beef to a large plate and cover. Repeat.
4. To the now empty skillet, add 1 tablespoon oil and heat over medium high heat. Add onions and sauté two minutes; add bell peppers, garlic and ginger and sauté one additional minute.

1. In a medium bowl, toss together the beef, baking soda, and 1/4 cup water, and allow it to marinate for 1 hour. The baking soda will help to tenderize the beef. Then “wash” the beef under running water for 5 minutes, using a light to moderate stream of water so it flows out, but the beef stays in the bowl. After the beef has been rinsed, pour out the water, and marinate the beef with two teaspoons of cornstarch. Set aside.
2. Heat 1 tablespoon of oil in your wok over high heat. Stir fry the bean sprouts for about 2 minutes, then add the Enoki mushrooms. Stir and mix everything well until the mushrooms have wilted.
