1. If you’re going the traditional route and using pork fat, add the pork fat to a food processor and process until smooth. Then add the shrimp, cilantro, scallions, ginger, sesame oil, sugar, salt, cornstarch and egg white. Process until smooth.
2. Divide the mixture among 4 slices of sandwich bread, spreading it evenly out to the ends. Sprinkle with sesame seeds, and lightly press the sesame seeds into the shrimp mixture. Cut each slice into quarters on a diagonal to create little triangles.
3. In a large nonstick or cast iron skillet, heat ⅛ inch of oil until shimmering. Fry the triangles in the skillet, shrimp-side down first, until golden––about 2-3 minutes.
4. Use a spatula to carefully turn them over, and fry the other side for about 1 minute. Transfer to paper towels to drain. Serve immediately!

1. Put all the ingredients for the shrimp into a blender or a food processor. Blend on medium speed until they turn into a fine, sticky paste.
2. Roughly divide the paste into 6 equal parts. Spread one portion onto a piece of toast, right to the edges (see note 1).
3. Option #1 Pan-frying: Heat up oil (enough to cover the surface) in a pan over medium heat. When the oil is hot enough (use a sesame seed to test. It’s ready if the seed spins around quickly), put in the triangle pieces with the sesame seed side facing down. Flip over when the first side becomes golden. When the other side browns, remove it from the pan.
