1. Heat the ghee over medium to medium-high heat in a 5-quart pot. When it starts to ripple, sear the meat on all sides, about 5 minutes. Stir in the onion, garlic, and ginger and cook until the onion starts to soften, about 3 to 5 minutes, stirring frequently. Stir in the cardamom, bay leaves, cloves, paprika, salt, coriander, cumin, cinnamon, black pepper, and cayenne, and fry until the spices are fragrant, about 30 seconds, stirring constantly.
2. Use a wooden spoon to push the beef and onions to one side of the pot. Add 2 tablespoons of yogurt to the empty area, stirring continuously until it blends in; continue this way until all the yogurt is added.
3. Add the beef bone broth, bring the mixture up to a boil, and then put a lid on it, turn it down to a simmer, and let it cook until the meat is tender and the curry is thickened, about 1 hour, stirring occasionally.
4. Remove the cloves and bay leaves, and taste and season with additional salt and black pepper.

1. Place the ginger and garlic in a bowl, along with the turmeric, cumin, pepper and yoghurt. Mix together, then add in the chicken pieces and mix again. Cover and refrigerate for 30 minutes.
2. Spray 10 squirts of frylight in a large frying pan pan (or the insert to your slow cooker if you can use it on the hob like mine. I use this [easyazon_link identifier="B00IPENZK0" locale="US" tag="kitchsanct-20"]Slow Cooker[/easyazon_link] <--affiliate link), turn the heat to high and add the marinaded chicken. Lightly brown all over (should take about 8-10 minutes) Remove the chicken and place in a bowl.
3. Add the onions, red peppers, chopped chillies, the stalks from the coriander (cilantro), cloves, cinnamon, cumin, coriander, paprika, salt, pepper and tomato puree to the pan. Cook for 5 mins on a medium heat, stirring regularly, until the onion starts to soften. Turn off the heat, add 4tbsp of the stock and carefully (cover if needed) whizz into a puree with a hand blender (or transfer to a food processor if you prefer).
4. Add the puree back into the pan, then add the chicken, remaining stock, chopped tomatoes and cardamom. Stir and bring to a simmer, then transfer to your slow cooker.
