1. Heat the oil in a large wok or saute pan set over high heat; once hot, add the ground meat of your choice, salt and pepper and cook until browned, about 7 or 8 minutes.
2. Throw in the onion, celery and mushrooms and continue cooking over high heat until slightly softened and fragrant, about 3 minutes. Add the broccoli, bell peppers and green onions and saute for about 30 seconds, then add the soy sauce, sesame oil, sambal oelek and fish sauce and stir until completely incorporated.
3. Finally, stir in bean sprouts, cook for about 30 seconds more and serve.
4. Garnish with fried noodles and chopped green onions, if desired.

4. While the chicken cooks, prepare the brown rice according to the package instructions and prepare the sauce in a small bowl.
