One of the main ingredients that you need to make an authentic Pozole is hominy. In Mexico, it is sold raw, so it takes a little bit extra effort to peel and soak them so that they are soft enough to use. Fortunately, cooking is a bit easier in today’s day and age and you can buy it ready-to-use at the store.
How do you make real pozole? Place the meat in a large saucepan and just cover with lightly salted water. Add 1/2 chopped onion, the 2 cloves peeled garlic, pepper, cumin, and oregano. Bring to a boil over medium heat, skim off any foam that rises, reduce heat, cover and simmer for 45 minutes. Remove meat and broth, reserving both.
