3. Assemble your enchiladas. Lay out the tortillas and spread a thin layer of the enchilada sauce over the tortilla. Top with carnitas and shredded cheese down the center of the tortilla, then fold over both sides. Place them into the prepared baking dish. Pour over the enchilada sauce. Top with shredded cheese. Bake at 350 degrees for 20 minutes or until sauce and cheese are bubbly.
4. Garnish with fresh cilantro and serve as is or with the toppings of your choice.
