However, I've purchased wonderful ricotta cheese from a local market that was dry and drained. It came in a block, like parmesan. If you can find some ricotta not stored in water, that will save you the hassle.
3. Cut off a corner of your piping bag. It doesn't have to be perfect, just make the hole about an inch and a half wide.
