Beef Birria. I like to make this with a combination of oxtail and beef shank from RUMBA MEATS; the bone-in meat renders a very flavorful Birria broth. You can also use Beef cheek and oxtail (the cheek has a lot of meat). You can make your own combination, too, just make sure you add a cut of meat with some bone in it.
Birria is made with lamb meat or beef. Most often, rib meat is what is used from the lamb, and the shank for beef, but you can use other cuts as well. You start by marinating the meat in a combination of guajillo, ancho, and chipotle peppers. You will also use spices, such as cumin, thyme, oregano, marjoram, and cloves.
Assemble and heat tacos: Fill each tortilla with birria and top with Mexican cheese, chopped onion, and cilantro. Warm tortillas on a griddle, flipping until both sides are crispy and cheese is melted. Serve with extra sauce on the side for dipping.
