The traditional Albanian recipe is a dish of the Albanians named tave kosi, a dish of baked lamb, yogurt sauce, and rice. Some other specialties include pace, a dish made by boiling the head of a cow, sheep, or pig until its meat comes off, which is then made into a stew using garlic, onions, and other spices.
This traditional Albanian recipe is a favorite dessert and made of shredded phyllo dough is dusted with vanilla sugar and walnuts and baked until golden brown. This beloved Middle Eastern dessert goes by many names (and spellings) including Kunafa and Kadaif. It’s a decadent pastry using shredded phyllo dough instead of phyllo sheets.
Albanian meatball soup Use a wide-bottomed pot to keep the meat loose. Pour the meat broth into it and set it to heat. Combine all the meatball ingredients in a bowl and squeeze the mixture well enough to bind. Form balls the size of a walnut. Once the liquid boils, add salt, pepper and olive oil and carefully place the meatballs one by one.
It is believed that the beginnings of this dish date back to 1452 when the Ottoman Sultan Mehmed II was besieging Kruja, where the Albanian leader Skanderbeg was resisting the Ottoman advances to the west. While occupying Elbasan, the sultan used to enjoy a special casserole made from lamb and kos, a kind of yogurt made from goat’s or sheep’s milk.
