Chop onions and cauliflower into bite sized pieces. Cook for 3 minutes, then add cauliflower and stir well. Add a 1/2 cup of water to the pan, then cover and let steam for about 7 minutes. Turn off heat and leave to cool. Meanwhile, in a large bowl, add the ricotta (or cottage) cheese and cream cheese to a really large bowl.
