1. Add the pasta to a pan of boiling water and simmer for 12 minutes.
2. Heat the oil in a frying pan and add the chilli and garlic and cook on a low heat for 1-2 minutes.
3. Add the chopped tomatoes, tomato puree and salt and pepper to the pan and stir well and simmer until the pasta is ready.
4. Drain the pasta (reserving a little of the water) and add to the sauce along with the basil.

1. Heat olive oil in a medium pot or Dutch oven over medium-high heat. Add the onions and saute for 3 minutes. Add the garlic and saute for 30 seconds.
2. Reduce heat to medium and add the diced tomatoes, tomato paste, chicken stock, basil, parsley, red pepper flakes and salt. Simmer until reduced slightly, about 10 minutes, stirring occasionally.
3. Use an immersion blender (or regular blender) to blend the sauce to your desired consistency. I like my sauce fairly blended, but I know some others like it chunky.
4. Taste and season with more salt, if needed. Serve immediately or let it cool down completely before placing it in an airtight container to store in the refrigerator.
