2. When the rice is ready, allow it to cool and then put it in a large bowl and stir in 1 egg, 1/4 cup breadcrumbs, 1/8 teaspoon salt, dash of pepper, 1/2 teaspoon of oregano, 1/4 cup Parmesan cheese and 1 cup of shredded mozzarella cheese. Mix until thoroughly combined.
3. Use your hands to form into small balls.
4. Beat two eggs in a bowl and dip the formed rice balls in the egg. Roll the rice balls around in the bread crumbs until they are completely covered.
