2. In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the cream cheese on medium-high speed until completely smooth and creamy. Add the butter and beat until combined, scraping down the sides and up the bottom of the bowl as needed. Add granulated sugar and beat on medium-high speed until smooth and creamy, about 2 minutes. Add the egg, lemon zest, vanilla extract, and almond extract and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.
3. Add the flour mixture to the wet ingredients and beat on low until combined. Dough will be very creamy, sticky, and soft. Cover and chill the dough for at least 3 hours (and up to 4 days) in the refrigerator.
4. Preheat oven to 350°F (177°C). Line large baking sheets with parchment paper or silicone baking mats.

Estimated Reading Time: 2 mins1. Gather Ingredients. You will need: 1 cup of butter (2 sticks) 8 oz of cream cheese. 2 1/4 cups of flour. About 3/4 a cup of confectioners (for rolling out the dough and sprinkling on top)
2. Make the Dough. Using a food processor (or a pastry blender, like my Mom), mix together the flour, butter, cream cheese and salt until a ball of dough forms (I use the pulse feature at first to make sure everything gets mixed in, then go ahead a press, "on," until the dough forms a ball)
3. Chill the Dough. Divide the dough into 2 parts, and form each part into a disc. Wrap the discs (I use waxed paper, I'm sure saran wrap is fine, too) and chill them in the fridge for an hour.
4. Roll Out and Fill Dough. After the dough has chilled, preheat over to 375 F. Prepare a cookie sheet with parchment, silicon sheet or grease. Sprinkle powdered sugar on your work-space.
5. Form Cookies. Fold one corner diagonally towards the other corner (see first picture). Press down to seal. Fold over the over the other corner and press down to seal.
6. Bake and Cool. Bake cookies until golden, about 15 minutes. Place on a rack to cool.
7. Finish and Enjoy! These cookies are good with or without a sifting of powdered sugar. If your guest want the recipe, you can share this link with them!
