Process for 1 minute or until mixture becomes a smooth batter. Or mix batter by hand: place flour, salt, eggs, sugar, vanilla and cinnamon in a large bowl and beat with a wooden spoon until smooth. Add milk, half at a time, beating well.
2. 2 Leave batter to rest and prepare fruit. Place apricots in a lightly greased ovenproof dish or small dishes. Pour over batter and cook large pudding for 25-30 minutes until batter has puffed up. Small puddings need about 20 minutes.

3. Arrange apricots in greased 10- or 10 1/2-inch ceramic tart dish or clafoutis dish, rounded side up. Pour in batter.
4. Bake at 400 degrees until top is browned and clafoutis is firm, about 45 minutes. Press gently on top in middle to see if it is firm. If it isn't, return clafoutis to oven for about 5 minutes. Cool slightly on rack. Place 2 to 3 teaspoons powdered sugar in strainer and tap it above clafoutis to dust. Serve warm.
