Get 4.5 litres (1 gallon) of cold water and drop in your Campden tablet. A Campden tablet is a sulfur based product which is used to kill bacteria which grow during the fermentation process, preventing many other wild yeasts from growing which would affect the flavour of your crab apple wine.
Crush the apples, press and use the juice only. If this is not possible, then remove the core and chop the fruit; place in straining bag in primary fermentor. Add sugar to the desired specific gravity and water to make 1 gallon.
