Total Time: 1 hrCategory: DessertCalories: 92 per serving1. Heat coconut oil in a large frying pan over medium heat. Saute zucchini until softened. Add the sweetener and cinnamon and cook a couple more minutes. Sprinkle the gluccomannan on top and mix well. Set aside.
2. Preheat oven to 350.
3. Combine the crust ingredients in a food processor and pulse until a dough forms. Roll it out into a large rectangle about 1/4 inch thick and cut out 16 1.5-2 inch circles. I used an upside down sippy cup. Reroll the scraps and cut thin strips of dough. Make a criss cross pattern on top of the cookies.
4. Bake for 20-30 minutes or until golden brown.

2. Wash and dry apple. Can be peeled or left intact - either way is fine. (I didn't peel mine.)
3. Core apple and cut into chunks. Place chunks in small food processor and process until pureed - stopping and scraping the sides as needed. (Puree should resemble raw apple sauce. You'll need 1/2 cup of it for the recipe.)
4. In a medium bowl, add the almond flour. Stir in 1/2 cup of the pureed apple, cinnamon and salt (if using) until thoroughly mixed.
